Pago On Main – Pago Burger

Pago On Main is the downtown SLC outpost of Scott Evan’s famous 9th and 9th restaurant – the farm to table concept that’s won numerous awards. Pago On Main is open for lunch and dinner.

Burger build: 8oz grass fed beef, bacon, white cheddar, pickled onions, arugula, trufile frites

Price: $19

Stuart: The burger patty is a hefty eight ounces and is plenty juicy – though my burger was overcooked, closer to well than the requested medium – no pink was present. While juicy, the flavor is somewhat lacking and the toppings fail to impress. The onions are more pickled than caramelized, and the bacon while crisp is more reminiscent of a buffet breakfast than fancy restaurant. There’s a good salty seasoning here and the sharp acidic sauce (mustard based perhaps) is a nice contrast to the bitter arugula greens. I found the brioche style bun too sweet, but it did. hold up well throughout the dish.
